This is our 'Tre Vignis', the classic 'Collio Bianco' grape from the Venica&Venica portfolio, a wine introduced to the market in the 1980s.

Harvest

The complexity of vinifying different varieties together, since it is a true blend and not a blending, lies in the difficulty of harvesting grapes with the same perfect degree of ripeness. To get around this problem, we wait for the Friulano, which forms the basis of the wine, to be perfectly ripe, and for the other grapes we carry out manual sorting in the vineyard to harvest only the perfectly ripe bunches. The grapes were harvested by hand and destemmed on 14 September.

Vinification | Aging

Maceration of the three grapes takes place concomitantly, as this is a blend. The must ferments and matures on the lees in 5 HL tonneaux (50%) and the rest in 30 HL steel containers. Production is limited and amounts to about 2,000 bottles.

Bottling

The wine was then blended and bottled at the full moon in July 2018.

Sensory information

Color

Intense and brilliant gold.

Olfactory notes

The olfactory panorama ranges from the bitter almond of the Friulano, to the banana of the Chardonnay, to the pepper of the Sauvignon, thus offering freshness, territoriality, and a harmonious bouquet of fruity and vegetal notes. Slight vanilla and smoky nuances are also present.

Taste profile

In the mouth, the structure is high, the body is full, the taste is fruity, fat and soft, slightly creamy and persistent, with a prolonged finish on toasted notes, the tomato leaf of the Sauvignon and the bitter almond of the Friulano.

To be paired with

The structure of this wine also allows it to be paired with important dishes of baked white meat, porcini mushrooms, and mature cheeses. Try it with spicy gorgonzola and pumpkin risotto or with crespelle with wild herbs.

The vineyard

The percentages of the three grape varieties are around 50% for Friulano, which thus serves as a base, 30% for Chardonnay and 20% for Sauvignon. Each of the three contributes splendidly to the final result with its own characteristics: territorial typicality and structure for the Friulano, elegance and body for the Chardonnay, aromaticity for the Sauvignon.

The vineyards of this white wine are located within the Collio DOC area.
