The wine

The shy but heartening rays of a warm early spring sun peep through the branches of the wood above the hill. A cool breeze brushes the meadow dotted with the first wild flowers (daisies, nettles, forget-me-nots...).

Harvest

The grapes were hand picked and de-stemmed on September 5th and September 9th, 2020.

Vinification | Aging

The must was then let on the skins for about 12 hours at a temperature of 10°-12° C in tanks especially designed to protect it from oxygen by using recycled carbon dioxide from the first fermentation, in order to avoid using high levels of antioxidants. Subsequently, 40% of the must fermented and aged on the lees for 5 months in 20-27 hl barrels and the remaining part in stainless steel vats.

Bottling

The wine was then blended and bottled during full moons between the end of March and July 2021.

Sensory information

Color

Lively straw yellow with golden highlights.

Olfactory notes

It’s a wine with an elegant and clean nose profile, persistent and of increasing intensity, with harmonious notes of blooming fluer-de-lis, chamomile, broom, lemon zest, medlar and rennet apple, which with aging turn into hints of hay and dried medicinal herbs. There are also mineral sensations.

Taste profile

On the palate it’s precise and elegant at the same time. The sip is lively and fresh, with a rich flavor and delicious floral and fruity notes. Consistent, structured and persistent, clean and balanced in acidity and intensity. An elegant minerality persists also in the finish.

To be paired with

Anpas delica fish, risoo with seasonal herbs, courgette velouté, crosni butter and salmon or grilled chicken salad.

The Wine

Shy but heartening rays of a warm early-spring sunlight filter through the branches of the forest above the hill. A fresh breeze brushes the lawn dotted with the first wildflowers (daisies, nettles, “forget-me-nots” …).

 

This is what you feel while opening a bottle of our wonderful “Tàlis” Pinot Bianco.

Actually, not by chance the word “tàlis” means dandelion in Friulian.

As the journalist Carlo Cambi says: this is a wine that “in the glass takes the Sun’s color“.

The vineyard and the vine

Our vineyards of Pinot Bianco are located inside the DOC Collio area.

The vineyard

Elegant French grape variety, coming from Alsace, 150 years ago took its place in the Friulian territory, finding the ideal climate conditions to exalt all its qualities with modesty, without exaggerating. Difficult to manage, it loves cool areas, needs good lighting and requires a lot of care. A delicate variety, between the rows of the vineyard but also in the glass: Pinot Bianco conquers with its finesse, like a fresh touch in the mouth, and can therefore be considered among the most elegant white wines in the world.
