Harvest
The grapes were hand picked and de-stemmed on September 16th 2019.
Vinification | Aging
The must was then left on the skins for 18 to 24 hours at a temperature of 11°-12°C in tanks especially designed to protect it from oxygen by using recycled carbon dioxide from the first fermentation, in order to avoid high levels of antioxidants. Subsequently, 40% of the must fermented and aged on the lees for six months in 20hl and 27hl oak barrels and the rest in stainless steel vats.
Bottling
The wine was then assembled and bottled during full moons between March and June 2020.
Emotional information
Color
Intense sunny yellow with golden nuances.
Nose
The bouquet is wide and varied: from the fruity notes of pear, apple, white peach and banana, to herbs and wildflowers, wisteria, rose, to hydrocarbons and to the uniqueness of toasted almond.
Palate
When tasted, this wine has the right flavor, a vibrant freshness, great texture and perfect balance. Highly structured, full-bodied, warming and harmonious. Splendid drinkability, the sip is smooth and graceful, with a long almondy persistence unique of this grape variety.
To be paired with
Ideal as aperitif, especially with raw ham, but with appetizers in general. It can perfectly match with seafood and shellfish, especially with shrimps, but its full-body also allows it to be paired with important baked white meat dishes. In general it goes well with a lot of dishes. It is wonderful with a risotto with fresh porcini mushrooms
