The grapes were picked and de-stemmed between 22nd and 29th August.
The must was then left on the skins for 12 to 14 hours at a temperature of 10°-12°c in tanks specially designed to protect it from oxygen by using recycled carbon dioxide from the first fermentation, thus reducing levels of antioxidants. Subsequently 30% of the must fermented and aged on the lees for five months in 20hl and 27hl oak barrels and the rest in stainless steel vats.
The wine was then assembled and bottled at the full moons between the end of March and May.
A wine with distinctive varietal character. Broad and complex on the nose with ripe fruit (banana) and floral notes (violet and lime tree blossom). On the palate, good body and well-balanced acidity.
Light starters, pasta either with sauce or in broth, egg and fish dishes.
