Harvest

Grapes were harvested and destemmed between August 26th and September 21st, 2022.

Vinification | Aging

After harvesting, the grapes are macerated for about 12 hours at a temperature of 10/12°C in dedicated containers, protected from oxygen with innovative systems that recycle fermentation carbon dioxide, in order to minimize the use of antioxidants. Approximately 40% of the wine matures in large wooden barrels of 20/27 hectoliters, while the remaining portion is aged in stainless steel containers.

Bottling

The wine was bottled during the full moons between March and June 2023.

Sensory information

Color

It presents an intense straw-yellow color.

Olfactory notes

This wine boasts an elegant and clean aroma, persistent and progressively intense. Among these, the notes of medlar and jasmine flowers stand out, giving way to a delicate mineral undertone.

Taste profile

On the palate, it confirms its elegance. The sip is fresh, rich in salinity with intriguing floral and fruity hints. It is substantial, well-structured, and exhibits a good taste-olfactory persistence.

To be paired with

Seafood appetizers, vegetable-based minestrone, seasonal herb risotto, zucchini velouté. Also worth trying with buttered salmon crostini or chicken salad.

The Wine

The shy but reassured rays of a warm early spring sun peek through the branches of the woods above the hill. A fresh breeze brushes across the meadow adorned with the first wildflowers (daisies, nettles, "forget-me-nots"…).

This is the sensation you experience when uncorking a bottle of our marvelous Pinot Bianco "Tàlis." Not coincidentally, "tàlis" precisely means dandelion in Friulian. As journalist Carlo Cambi puts it: it's a wine that "in the glass takes on the color of sunshine."

The vineyard and the vine

Our Pinot Bianco vineyards are located within the territory of the Collio DOC.

The vineyard

An elegant white grape variety of French origin, originating from Alsace, which for 150 years has found a steadfast home in Friulian territory. It has encountered optimal climatic conditions here to subtly enhance all its qualities without ever becoming excessive. A challenging variety to manage, it prefers cooler areas, thrives with ample sunlight, and demands meticulous care. Delicate both in the vine rows and in the glass, Pinot Bianco wine captivates with its finesse, akin to a gentle caress on the palate, and can be considered one of the most elegant white wines in the world.
