The grapes were destemmed in the first decade of October 2021.
Vinification | Aging
After arriving in the cellar, the grapes underwent maceration for about 10 days at a temperature not exceeding 24°C; subsequently, the wine matured in steel tanks until bottling.
Bottling
The wine was bottled during the full moons between March and June 2023.
Sensory information
Color
intense ruby red.
Olfactory notes
The bouquet, predominantly fruity with hints of small red berries (blueberries, currants, raspberries), is characterized by spicy nuances (black pepper, licorice) and herbaceous tones typical of this variety, especially the unique notes of arugula, bell pepper, and mown grass.
Taste profile
: On the palate, it is broad and full-bodied, moderately alcoholic, tannic, and enveloping. A lively freshness is primarily imparted by the characteristic herbaceous flavor of arugula. As it matures, it progressively loses its acidity and youthful vegetal element, evolving into balsamic and spicy undertones. A respectable persistence aligns the flavors with the bouquet perceived on the nose.

However, it is more challenging to find in its pure form due to its complex herbal component that is difficult to manage. Nevertheless, in the hands of an experienced winemaker, this grape can yield excellent results, offering a wine with a charm closely tied to the distinctiveness and uniqueness of its fruity bouquet with herbal (especially arugula) and spicy undertones.
