Venica & Venica:
Terroir Wines of Collio

The Venica & Venica winery celebrated its 90th anniversary in Dolegna del Collio, Friuli, in 2020: the Venica family is now in its third generation, the fourth is on the starting blocks.

Gianni and Giorgio Venica look after 40 hectares of vineyards in the unique hills of Collio in the north-east of Italy - planted with the most important grape varieties of the area: from the white Tocai Friulano (the basis of Collio DOC Friulano) to Sauvignon and from Pinot Bianco to red varieties: the members of the Venica family are down-to-earth winegrowers who, despite constant research and further development, value tradition and work to ensure its preservation.
The vineyards are located on the typical Ronchi, the hills of Collio, characterised by a wide variety of microclimates. All they have in common is the subsoil, which is often dominated by 'Ponka': it is made up of layers of marl and sandstone; the sometimes rocky layers degrade slightly under the influence of atmospheric influences, creating coarse elements that lead initially to a granular soil and later to a very fine soil. This creates an ideal substrate for viticulture that gives the wines minerality and intense taste nuances.

Ornella Venica, Head of External Relations: 'We want to understand and bring out the properties of the many microclimates in our vineyards in order to be able to optimally utilise the specific properties of each individual grape variety.
The estate's flagship wines perfectly express this philosophy: 'Ronco delle Cime' Friulano and 'Ronco delle Mele' Sauvignon. Ronco delle Cime is a vineyard planted to Tocai Friulano in a north-west position. The grapes are harvested in mid-September and left on the lees for six months (part in large wood, part in steel) to express the special character of this indigenous grape variety and of the place.

Giorgio & Gianni Venica gathered around the stone celebrating the company's founding date: 6 February 1930.

The 'Ronco delle Mele', on the other hand, is a precise interpretation of a Friulian Sauvignon voted by critics as the best Italian white wine in 2001: the grapes grow at about 150 metres above sea level and are harvested at the beginning of September. The wine matures for five months, partly in large wood and mainly in steel, which adds to its finesse.

Ornella Venica is also particularly interested in 'Tàlis', a single-varietal Pinot Bianco: the variety has been at home in Friuli for over 150 years. The wine's name derives from the Friulian word for dandelion and is symbolic of this wine that is 'elegant both on the nose and in the mouth, a wine that is told a little at a time, like the elegance of the bearing of European women that you appreciate gradually.' (Ornella Venica). Here too, the grapes are harvested in mid-September, and 40 per cent of the wine remains in large wooden barrels for five months.

'Sustainability serves above all to preserve the biodiversity of our land'.

Ornella Venica

"Each of our wines is an expression of its own unique terroir," says Ornella Venica. To ensure that this goes straight into the bottle, Venica & Venica has decided to pay special attention to the interaction between people and the environment. Ornella Venica: "This goes beyond organic and biodynamic certification and is a holistic transformation of the entire production process towards sustainability and respect for the environment - in every area and with the involvement of our entire team. The WineResort with its six rooms and two flats has long been part of this sustainable concept.

To document this process, Venica & Venica's first sustainability report was presented in February 2019: Rome-based The ConsumerLab included the report in its Index Future Respect 2019, as one of the 40 most representative of the more than 800 classified reports.

Three top wines

“Ronco delle Cime” Friulano DOC Collio 2019

Inviting apple blossom, aromatic herbs, fine even almondy, spicy; fresh yet powerful in the mouth, the acidity sustains, the finish with fusion and length. One of the longest-lived interpretations of the Tocai Friulano grape variety. Excellent with hors d'oeuvres and seafood.

“Ronco delle Mele” Sauvignon DOC Collio 2019

Complex bouquet of mint, citrus, even herbs and sage; juicy base, supported by classy acidity, notes of mint and peach on the finish. It pairs perfectly with lake fish, white meat or vegetable soups.

“Talis” Pinot Bianco DOC Collio 2019

An elegant interpretation of a Pinot Bianco from Collio: scents of lime blossom, camomile, citrus fruits, fresh apples; crisp and at the same time creamy in the mouth, the acidity well integrated, the finish mineral-fruity. Recommended with fish starters, tortellini in broth and poultry.

Pumpkin and Fasolari gnocchi

WINE/VITIGNO IN PAIRING WITH THE RECIPE: Malvasia Istriana

Name of wine: Malvasia 'Petris' DOC Collio

Name of winery: Venica & Venica

REASONS FOR PAIRING:

Malvasia Istriana, a white grape of Greek origin, was brought to Italy by the Venetians during the Serenissima period via Dalmatia and Istria. In Friuli Venezia Giulia it has found its natural habitat, in Collio the sandstone marls give it aromaticity, freshness, flavour and minerality.

A complex wine that finds the right combination: the sweet tendency of the pumpkin gnocchi and the sea flavour of the fasolari meet the freshness and savouriness of the malvasia for a perfect closure of cleanliness and aromaticity.

HISTORY AND ANECDOTES OF THE RECIPE 'PUMPKIN AND FASOLARI GNOCCHI

Pumpkin gnocchi is a classic dish in Friulian trattorias and homes, especially in autumn when it is found in abundance.

Fasolari are delicious molluscs with very soft flesh and a strong salt content. They are found in the Upper Adriatic area. Their habitat is the seabed, and their aesthetically pleasing shell in various shades of orange makes them suitable for refined and impressive dishes.

Recipe difficulty: fairly easy

Time required: 90 minutes

INGREDIENTS

Doses for 4 people

1 Kg. pumpkin - 2 egg yolks - pinch of salt - 100 gr. flour - nutmeg - 1 kg. fasolari - one garlic clove - parsley - Evoà oil

DESCRIPTION:

Steam the pumpkin, after cooling and draining it add the egg yolks, salt, flour and nutmeg. Cook the gnocchi in lightly salted water and when cooked, drain and cool. Chop the fasolari and pan-fry them with half a clove of garlic, add a tablespoon of cooking water, add the gnocchi and a sprinkling of parsley.
